Not far from the farm, the Saltworks Museum provides a fascinating insight into the ancient art of salt-making. Housed in former salt workers' houses, the museum showcases interactive displays and abandoned pans, offering a glimpse into the region's salt-making history. Istrian salt, prized for its quality and whiteness, is still harvested by hand, and the salt flower, with its delicate, slightly sweet taste, is a local specialty. The museum highlights the importance of the salt pans as a haven for wildlife, with black-winged stilts and snow-white egrets gracing the landscape.

The town's culinary scene is a highlight, with local produce and award-winning wines taking center stage.

I join local guide Matic Horvat on an ebike tour, zipping through the countryside and sampling local produce. We indulge in a zesty orange and ginger ice cream in Koper and savor an aperitivo of fresh rosé from local winemaker Zaro. The wine's minerality, informed by its proximity to the water and salt, is a unique feature. The Manzioli wine bar, with its killer homemade Tabasco sauce, is a must-visit, and the Pier of Tastes food market, held monthly, showcases the region's culinary excellence.

My culinary journey continues with visits to artisan producers. Tilen Praprotnik's dedication to reviving indigenous grape varieties results in an extraordinary Malvasia wine. Korenika & Moškon offers a taste of different olive oil varieties, including the powerful Belica. At Gostilna Korte, Lejla's wild asparagus sauce on steak is a culinary masterpiece. The local produce and wines, combined with the region's natural beauty, create an unforgettable experience.
